A golf club dinner, anniversary celebration, wedding or charity function, Ross will work closely with the catering team to ensure a balanced menu for all tastes and assist in the running of the event both in the kitchen and front of house.

Ross has travelled as far as Australia and New Zealand and many other places in between to organise catering events.

Headlam Hall, Country House Hotel, held the first Fine Dining with Ross format for hotels in February 2005.

Ross went stately at the luxurious surroundings of Headlam Hall near Darlington, County Durham in February of this year. This fabulous country house, built at the turn of the 17th century, held an exclusive dinner for 50 people with a menu created and produced by Ross, ably assisted by the top class chefs at the Hall. The menu reflected the very best of local produce with fine wines available to match each course.

From 50 people to 3000, Ross proves he can rise to any challenge. In September 2004, he ran the Waterfront Restaurant at the Southampton Boat Show.

Ross truly showed his creative talent in devising a menu that showcased his culinary ability as well as ensuring that there was something for everyone – from sushi to steak and chips! Feeding 3000 people over 10 days is no mean feat – a challenge that Ross rose to admirably with over 10 years experience in the catering world under his belt.

Here is a tantalising sample of the menu created for this unique project:

Starters
  • Bisque of Crayfish from the River Kennet
  • Smoked Salmon, Trout and Halibut Terrine with a Vinaigrette Salsa Verde
  • Vegetarian Sushi Plate
  • Carpaccio of Ostrich with Roquette Lord of the Hundreds and Truffle Oil
Main Course
  • Teriyaki glazed Monkfish with Seaweed Salad and Crab Sushi Roll
  • Seared Weymouth Scallops, Crispy Bacon and Buttered Squash with a light Thai dressing
  • Tuscan Spinach Gnocchi with Tomato Sauce
  • Grilled Scottish Fillet Steak with Watercress, Green Peppercorn
    and Basil Butter, served with Hand Cut Chunky Chips
